1st WELLNESS WEBINAR: COOKING CLASS

Last March 18, 2021, the Philippine Society of Pediatric Cardiology held its 1st Wellness Webinar with COOKING LESSONS with Chef Mira.

Chef Mira Angeles taught the PSPC members two (2) simple dishes: the Brown Rice salad and Soy Honey Garlic Salmon.  Here are the recipes she shared:

BROWN RICE SALAD

  • 3 cups brown rice cooked
  • Spring onions sliced
  • 1 red bell pepper finely diced
  • ½ cup raisins
  • ½ cup nuts (peanuts or cashew nuts)
  • ¼ cup olive oil
  • 2 tbsps balsamic vinegar
  • 1 tbsp honey
  • 1tbsp mustard
  • Salt and pepper to taste
  • In a small bowl, mix the balsamic vinegar, honey, mustard and olive oil. 
  • Set aside. Mix all the other ingredients – cooked rice, raisins, nuts, red bell pepper and the balsamic dressing.

SOY HONEY GARLIC SALMON

  • 2 pcs Salmon Slab or Fillet
  • 2 tbsp honey
  • 2 tbsp soy sauce
  • 1 tsp mustard
  • 1 tsp ginger
  • 2 cloves garlic
  • Salt and pepper
  • Pat dry the salmon fillets, then season with salt and pepper. 
  • Heat the pan with oil and pan fry the salmon fillets for about 5 minutes. 
  • In a small bowl, mix the soy sauce, mustard, ginger, garlic. 
  • Pour the sauce once the salmon is cooked. Season with more salt and pepper to taste.

After the cooking lessons, there was an intimate chat with Chef Mira wherein she candidly answered questions about cooking and gave useful kitchen tips to the eager listeners.
